If there is one thing that is sacred to us southern women, is has got to be fried chicken. Everyone has their own recipe and a lot of people SWEAR by their own, but I have not found one easier than my mothers recipe. She is simplistic, pure in her seasonings and makes it easier than fried pie (hmm….that reminds me of another recipe to put down!) Lemme tell you how delicious and moist it is WITHOUT soaking it at all in buttermilk. All you need is: Chicken Wings, onion powder, black pepper, flour and oil for the fryer. Yes. That is all. You can say what you want, but this simple way of frying chicken has yet to fail my tastebuds yet!
- 1 teaspoon of black pepper
- 1 1/12 teaspoon of onion powder
- 1 1/2 cups of flour (if you have a paper bag, put it to use!! I will explain this later!)
- Enough oil to slightly cover the chicken in a shallow pan
Heat your oil in a deep pan that will just cover the chicken while you are frying. While the oil is coming to a temp of 375* you can take the time to season your chicken wingettes. Now to make it easier, I cut my chicken up and separate the drummetes from the wings themselves! It ensures that the chicken all fries evenly at the same time. I then take a grocery brown paper bag and pour the flour in the bag.
You can certainly just use a bowl or ziploc bag to coat your chicken with flour, but this old school way my mom does it gives the chicken an even coat of flour EVERY TIME. Drop that chicken in that bag and shake away boo! (this is my arm workout for the day!)
Now that the chicken is seasoned and floured, its time to fry them babies! Check your oil with a wooden spoon….if bubbles appear around the spoon base, then you are ready to go!
Drop them babies in and fry them for about 4 minutes per side, turning once through the process. Use your better judgement though while frying. I usually just peek on the other side and if the chicken is a golden brown color, its ready to flip! My mother always said when they float to the surface they are ready to go!
