Philly Cheesesteaks

Ohhh my goodness……these here are my absolute WEAKNESS y’all. Give me a good, soft roll, add gooey provolone cheese with sauteed peppers and onions, all wrapped up with some tender slice ribeye. Oh my GOODNESS folks…I cannot tell you how delicious they are! I am from NY originally and have my fair share of Philly, so I believe I am a good judge of character on what makes this a perfect sandwich. First and foremost, you need a good marbled cut of meat that is thinly sliced and seasoned properly. Secondly, I a HUGE believer that having the wrong kind of roll can make or break this entire sandwich. Lastly….the CHEESE PEOPLE. Everyone has their argument for a philly between cheez whiz, american cheese or provolone and I am HERE TO TELL YOU…..its provolone. But when I make my philly cheesesteaks, I dont just met the provovlone cheese on the meat and veggies….oohhhhhh no. We make a delicious and decadent cheese sauce folks…follow along for this deliciousness!

Ingredients

  • 1 ribeye thinly sliced
  • 1 green pepper thinly sliced
  • 1/2 a sweet onion thinly sliced
  • 2 soft rolls ( I use the individual rolls at Safeway)
  • Provolone Cheese (6 slices)
  • 2 tbsp butter
  • 2 tbsp flour
  • 1/2 cup to 1 cup of milk
  • salt and pepper for seasoning
  • Olive oil

Directions

First and foremost, before I prep I take my ribeye and leave it in the freezer for about 40 minutes so it is easier to slice super thin! Take your peppers and onions and slice them thinly and set aside. Once your meat is little frozen, slice it super thin and let it sit at room temperature for about 20 minutes before seasoning it liberally with salt and pepper.

Get a large wok over medium high heat with a little bit of olive oil and saute your peppers and onions for about 10 minutes until caramelized and soft. Once they are done cooking, remove them from the pan and get a little more oil in the pan.

Before putting the meat on, I make my cheese sauce which is OUT OF THIS WORLD and soooo easy to make. Get a small pot and set it over medium heat. Melt 2 tbsp of butter and then add in 2 tbsp of flour to make a good roux. Add your 1/2 cup of milk in and then once it has thickened, add your cheese in and whisk until it is all melted throughout. If the cheese sauce is too tight, add up to 1/2 cup of milk until it becomes a smooth sauce!

Leave over low heat to keep warm until serving. The oil will be heated up by now and you can add your seasoned meat to the pan. Cook your meat for about 8-10 minutes until cooked through and then add your peppers back to the pan. Toast both rolls over a heated pan with butter and then add your meat to both rolls and pour the delicious cheese sauce over the meat and ENJOY. I cannot express to you how amazingly delicious these simple cheesesteaks are.
