Roasted Cauliflower

I will full on admit that I NEVER ate cauliflower growing up. I always thought that it was just broccoli’s fairer imposter and stayed clear. That all changed when I discovered how freaking delicious it is when roasted! Browning it in the oven creates a nutty taste you gotta experience for yourself. Better yet…..it’s a one pan side dish with easy cleanup that is done in 20 minutes!! Come…let me show you the way 🙂

Ingredients

  • One head of cauliflower, rinsed and florets removed
  • 1/2 cup of olive oil
  • 2 cloves of garlic minced
  • 1 tsp fresh thyme
  • 1 tsp of fresh rosemary
  • 1 tsp of salt
  • 1/2 tsp pepper

Directions

Preheat your oven to 400° and line a baking sheet with aluminum foil. Remove the stalk at the base of the vegetable followed by separating all the florets and rinsing them thoroughly. Mince your garlic and herbs, combined with the olive oil and seasonings in a large bowl. Toss the cauliflower in the bowl and make sure to coat every inch with the seasoned oil. Spread out evenly on a sheet pan, pop that baby into the oven and wait 20 minutes. When you see the outer layer start to brown take it out of the oven and ENJOY!
